Has anyone heard of Lauren’s Latest? I’m officially obsessed with her blog! She posts yummy recipes all the time. I’m determined to try a ton of them. Last Saturday night we were just lounging and I stumbled upon her Triple Chocolate Brownie Cookies… I instantly wanted them. Thankfully I had everything in my house EXCEPT I didn’t have any chocolate chips.. wahhh… well you need chocolate chips to make triple chocolate cookies or they’d just be chocolate cookies. Well I was in luck we had some favor candy from a party we went to the weekend before! Just happened to be white and milk chocolate. God was on my side on this one! 🙂 I also used Special Dark Cocoa so mine were a lot darker than hers (obviously!) But wow! This was such an easy & yummy recipe. The cookies are moist and soft and the best part, they’re so easy!

Mine turned out fantastic! If you love chocolate, you’ll LOVE these! Even my husband enjoyed, & he’s not even that into chocolate!


 

Ingredients:

1/2 cup butter, softened
1 cup granulated sugar
1 egg
1 teaspoon vanilla extract
1 cup all purpose flour
1/2 cup unsweetened cocoa powder ( I used Special Dark by Hershey! yum!)
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup white chocolate chips
1/2 cup mini semi sweet chocolate chips
^For the above I chopped up the chocolate I had!

Directions: 

Preheat oven to 350 degrees.

In large bowl, cream butter and sugar. Stir in egg and vanilla. Scrape sides and whip until light and fluffy. Stir in all dry ingredients until just incorporated. Scrape sides and mix again briefly. Stir both kinds of chocolate chips into dough. Scoop onto prepared baking sheets and bake 8-9 minutes. Cool cookies 5-10 minutes on hot baking sheet to finish baking, then remove to cool completely. Store in an airtight container for up to 3 days.
