Okay so September is technically Fall right?? Let’s face it pumpkin things are amazing and with summer dwindling with the daylight… it’s time for the most delicious time of the year!

My friends had a little fire to celebrate her birthday over the weekend… It was nice! I made buffalo chicken dip- no leftovers! && I also made Pumpkin Spice No Bake Cookies! Get excited… seriously they’re amazing! I will say they aren’t a “healthy” cookie and I’d like to explore eventually how to make these with genuine pumpkin but hey if you love no bakes this is a nice fall cookie… and It will have people asking you constantly for the recipe! The best thing about them are how very easy they are. I originally stumbled upon this recipe from here! I basically followed the recipe but added a few things!

The recipe is as follows.


 

Pumpkin Spice No Bake Cookies!

Ingredients:

1 & 1/2 cup of white sugar (this will help the cookie set)

1/2 cup brown sugar

3/4 cup butter (1 & 1/2 regular sticks- I buy half sticks [3] makes it nice for baking)

2/3 cup milk

1 box pumpkin spice pudding mix (I have to admit I bought 5 boxes of this as soon as I saw it at the store, last year I couldn’t find it! If you can’t find it you can sub vanilla pudding mix and add 1 tbsp pumpkin spice)

3 & 1/2 cups oatmeal (quick) – I will say I used regular because that’s what I had, quick would def be softer but it’s not a make or break it thing.

1 tsp pumpkin spice

1 tsp vanilla

(Also I added 1/2 tsp cinnamon, & 1 cup Toll House chocolate chips with carmel filling [to half])

Directions:

In a saucepan mix 3/4 cup butter, 2/3 cup milk with 1 & 1/2 cup white sugar AND 1/2 cup brown sugar. Bring this to a boil, boil for 2 minutes- It’ll be bubbly- Remove from heat. Add a box of pudding mix- mix completely. Then add 3 & 1/2 cup oats, 1 tsp pumpkin spice, 1/2 tsp cinnamon, and 1 tsp vanilla. Let stand for 5 minutes. Spoon onto wax paper. Let completely cool (they will set.) Store in airtight container. If wanting to add the chocolate chips add in when adding oats. The chocolate will melt a bit but it’s delicious!


 

The ones I made with the chocolate chips actually set faster. Serving size: It made about 30 cookies for me!
